Excellent Soup for Lunch
The combination of mushrooms and cheese yields great results.
Ingredients (for 6 servings)
- Fresh champignon mushrooms – 300 g
- Potatoes – 2-3 pieces
- Carrot – 1 piece
- Onion – 1 piece
- Butter – 30 g
- Processed cheese – 100-150 g
- Salt – to taste
- Greens – to taste
- Wheat croutons – 300 g
- Water (or broth) – 2 liters
How to Prepare Cheese Soup with Champignons and Croutons:
- Pour 2 liters of water (or broth) into a pot. Place it over heat and bring to a boil.
- Peel, wash, and cut the potatoes into pieces. Add the potatoes to the boiling water. Cook for about 20 minutes over low heat.
- Peel, wash, and dice the onion. Peel, wash, and cut the carrot into thin strips or grate it. Wash and slice the mushrooms.
- Heat a skillet and add a piece of butter. Once the butter is hot, add the onion and carrot. Sauté over medium heat, stirring for 2-3 minutes.
- Add the mushrooms to the skillet and sauté everything together for 3-4 minutes.
- Transfer the sautéed mixture into the soup. Add salt to taste.
- Grate the processed cheese on a coarse grater.
- Add the cheese to the soup. Cook over low heat for 5-7 minutes. Remove the cheese soup with champignons from the heat.
The cheese soup with champignons is ready. Serve with fresh herbs and croutons.
