Cheese soup with champignons and croutons

Excellent Soup for Lunch
The combination of mushrooms and cheese yields great results.

Ingredients (for 6 servings)

  • Fresh champignon mushrooms – 300 g
  • Potatoes – 2-3 pieces
  • Carrot – 1 piece
  • Onion – 1 piece
  • Butter – 30 g
  • Processed cheese – 100-150 g
  • Salt – to taste
  • Greens – to taste
  • Wheat croutons – 300 g
  • Water (or broth) – 2 liters

How to Prepare Cheese Soup with Champignons and Croutons:

  1. Pour 2 liters of water (or broth) into a pot. Place it over heat and bring to a boil.
  2. Peel, wash, and cut the potatoes into pieces. Add the potatoes to the boiling water. Cook for about 20 minutes over low heat.
  3. Peel, wash, and dice the onion. Peel, wash, and cut the carrot into thin strips or grate it. Wash and slice the mushrooms.
  4. Heat a skillet and add a piece of butter. Once the butter is hot, add the onion and carrot. Sauté over medium heat, stirring for 2-3 minutes.
  5. Add the mushrooms to the skillet and sauté everything together for 3-4 minutes.
  6. Transfer the sautéed mixture into the soup. Add salt to taste.
  7. Grate the processed cheese on a coarse grater.
  8. Add the cheese to the soup. Cook over low heat for 5-7 minutes. Remove the cheese soup with champignons from the heat.

The cheese soup with champignons is ready. Serve with fresh herbs and croutons.
