This simple and delicious dish should be in every cook’s arsenal, as it is easy to prepare. Ingredients (for 4 servings)
- Chicken thigh fillet – 450 g
- Potatoes – 350 g
- Bell pepper – 220 g
- Frozen green peas – 150 g
- Tomato puree – 150 g
- Onion – 150 g
- Carrot – 130 g
- Garlic – 6 g
- Chili pepper – 2-4 g (or to taste)
- Flour – 40 g
- Dried Provençal herbs – 1 tsp
- Salt – to taste
- Ground black pepper – to taste
- Sugar – 1 tsp
- Vegetable oil – 2-3 tbsp
- Fresh parsley (for serving) – 1 sprig
- Water – 1 liter
Preparation Instructions:
- Prepare the ingredients according to the list. Instead of tomato puree, you can grate fresh tomatoes.
- Cut the chicken thigh fillet into medium-sized pieces and place them in a bag.
- Add the flour. Tie the bag and shake it vigorously for a few seconds to evenly coat each piece of chicken with the flour.
- In a heavy-bottomed pot, heat 1-2 tablespoons of vegetable oil over high heat. In batches, add the pieces of chicken and fry until golden brown (about 2-3 minutes on each side). Place all the fried chicken pieces in the pot.
- Peel and finely chop the garlic and chili pepper. Add them to the pot with the fried chicken along with the dried Provençal herbs. Mix and sauté over low heat for 1 minute.
- Peel the onion and cut it into thin half-rings. Add the sliced onion to the pot.
- Stir occasionally and sauté for 5 minutes over low heat until the onion becomes soft.
- Peel the carrot and cut it into small pieces, then add it to the pot.
- Peel the potatoes and cut them into small or medium cubes. Add them to the other ingredients.
- Remove the seeds from the sweet pepper, cut it into cubes, and add it to the pot as well.
- Add the frozen green peas.
- Pour in the tomato puree.
- Boil water and pour the boiling water into the pot. You can adjust the thickness of the stew to your liking by adding more water.
- Bring the stew to a boil. Add sugar. Taste and add salt and ground black pepper to your liking.
- Reduce the heat to low and simmer the stew for 30-35 minutes.
- The stew is ready. If desired, garnish each serving with a sprig of fresh parsley and serve. Enjoy your meal!
